Coconut Muffins

These flavorful, moist muffins are not only Gluten-free, but also Grain-free, Keto, Low Carb and No Added Sugar! It’s only sweetened with fresh bananas.


Makes 6 muffins.


2 eggs 

⅛ cup coconut oil 

¼ cup plant-based milk (coconut milk works well) 

½ tsp vanilla extract 

¼ cup coconut flour (link)

½ tsp baking soda 

¼ tsp sea salt 

1 banana (mashed) 

Optional - add cinnamon, nutmeg or raw cacao nibs/powder (link)

Top with coconut flakes or pumpkin seeds. (links)


Preheat the oven to 180°C. 

Place dry ingredients in a bowl and mix. 

Place wet ingredients in a bowl and mix. 

Add dry to wet and mix. 

Place on a muffin tray in muffin moulds. 

Bake for approx 30mins (depending on oven), until the tooth-pick comes out clean. 

Cool on a baking rack or eat warm.
